December Recipes – Never Fail Chocolate Truffles

For anyone who knows me, it will come as no surprise to hear me say I’m not the world’s best or most inspired cook, but I do love to eat. So when I first saw the idea for the Escape Artists to put together an article for favourite family recipes throughout December, my first thought was ‘Not going there’. Then I remembered a recipe I stole from my sister years ago; a recipe even I managed to successfully whip up and impress my husband and our two daughters, and I’ve used this recipe many times since. Here’s my (sister’s) simple but yummy recipe for Never-Fail Chocolate Truffles.

Ingredients

  • 1 Cup of Plain Chocolate Biscuits (Eg: Chocolate Ripple or similar) = approx 8 biscuits
  • ½ Cup coconut
  • 1 Tablespoon Cocoa
  • ½ Cup Sweetened Condensed Milk
  • ½ Cup Extra Coconut

Method

Place biscuits in a plastic bag and crush using a rolling pin. For those of you with a food processor, it might be faster and easier to use it for this.

In medium sized bowl mix crushed biscuits, coconut, cocoa and condensed milk until it forms a sticky lump of a mess.

Roll sticky lump of a mess into 2cm balls – wait until you see your hands – and roll them into the extra coconut.

Refrigerate.

Eat (the best part) Enjoy.
